Better still, Cadbury Mini eggs are relatively cheap, widely available, and absolutely brilliant to bake with.

One of my personal favorites bakes for Cadbury Mini eggs are cookies.

So today, I would love to share with you my very own Cadbury Mini Egg Cookie Recipe that will be sure to go down well!

What Do You Need To Make Cadbury Mini Egg Cookies

Ingredients

All Purpose Flour

The core ingredient that essentially makes for the frame of the cookies.

Baking Powder

To help expand your cookies and help them rise.

Baking Soda

To ensure your cookies are light and airy.

Unsalted Butter

A core ingredient for structure and to ensure your cookies have that doughy effect we all love!

Brown and Granulated Sugar

To add some more sweetness!

Egg

For binding, structural and richness purposes!

Vanilla Extract

An important addition. Vanilla extract will enhance the flavors of the other ingredients, but most importantly, take the edge of the egg off!

Mini Eggs!

Milk Chocolate Chips

These really finish off the chocolate flavor, and give these cookies some extra creaminess!

How To Make Cadbury Mini Egg Cookies

Step One: To begin, you will need to preheat your oven. I suggest 350 degrees Fahrenheit (180 degrees Celsius).

Step Two: Line a baking tin with a baking sheet.

Step Three: In a mixing bowl, add the flour, baking powder, baking soda, and salt. Leave to one side.

Step Four: In a secondary mixing bowl, add the butter and brown sugar and whisk together until the mixture turns light. Then add the egg and vanilla extract and again whisk together.

Step Five: Add the flour mixture (from bowl 1 to bowl 2) and whisk until combined.

Step Six: Add the Cadbury Mini eggs and chocolate chips so that all the ingredients are together and formed into a batter.

Step Seven: Scoop around a tablespoon of batter out at a time (with a spoon) and place onto your baking tin. Level off each one and be sure to leave around 2-3 inches of space between the ‘cookies’.

Step Eight: Bake for 10-12 minutes – longer if you like them more crispy, shorter if you prefer a doughier cookie.

Step Nine: Remove from the oven, set aside on a baking rack to cool for 5-10 minutes.

Step Ten: Serve and enjoy!

You Can Customize Your Cookies

However, you can always make a few simple changes, or additions, to customize them further.

For instance, the chocolate chips.

You could use dark chocolate, or even white chocolate chips, but I’m more of a fan of milk!

Or you could try different types of flour, such as almond flour, if you are gluten intolerant, for instance.

Be Mindful Of The Cooking Temperature

Make sure you do not bake these cookies on too high a heat. Otherwise you risk burning them.

In fact, it’s best to preheat the oven first and put on a timer.

Check on them after 8 minutes and every 1 minute thereafter.

Be Careful On Cooking Times

These cookies quickly go from being doughy to crisp in just a few minutes of cooking time.

You need to be mindful and careful of cooking times!

Make More Than You Think You Need!

These cookies are so delicious, they will be sure to go down well.

So I would advise you cook a few more than you think you need to ensure everyone can enjoy them.

Plus, you may find that a few don’t cook as well as others (or they don’t look as great!)

So if you have a few more, you’ll be covered. And you can always eat those too!

What To Eat Your Cadbury Mini Egg Cookies With

On Their Own

These cookies are so good on their own, you needn’t have to have them with anything.

Ice Cream

Nonetheless, cookies and ice cream is a winning combination.

I suggest vanilla ice cream, or a even a chocolate ice cream, if you did fancy the extra indulgence.
